The Repsol Guide Puesto was created with the mission of bringing gastronomy to the best setting: a market, Vallehermoso, in the heart of Madrid. An open space for everyone to sample dishes prepared by chefs awarded Soles and Soletes by the Repsol Guide to Spain and Portugal.

To bring this to life an old fish market stall was dismantled and its materials transformed and reused in the same spot to configure this stand. The design project and its construction process have been a laboratory for experimentation with materials, in which the following interventions are particularly noteworthy:

  • Adiabatic air conditioning: A cooling system based on water evaporation, passing air through 3D-printed ceramic pieces.
  • Tables and bar: Their surfaces is made with the old stainless steel sheets recovered from the walls and counter of the old fish market.
  • Light reflectors: The remaining steel sheets left over from making the tables and bars were pressed by a car press and now serve as light reflectors.
  • Walls and skirting board: The original grey and black granite cladding from the fishmonger’s was dismantled and reintegrated into the finish of the office wall, and the remanant broken pieces were used to build the skirting board that runs around the stall.
  • Bar front: Made of an experimental terrazzo composed of white concrete and an aggregate that results from the remineralisation with CO2 capture of ash resulting from the combustion of domestic waste. This is an experimental material that has been developed by the R&D departments of Biscay (Petronor) and Repsol, and to which Lucas Muñoz Muñoz has had exclusive access.
  • Bar front structure: It makes use of the iron beams recovered from the original ceiling structure.
  • Tiling of the kitchen wall and floor: Original ceramic tiles from the fishmonger´s stall have been salvaged and combined with surplus tiles remnant from other projects by the construction company Zimenta.
  • Chairs and stools: Crafted by Sintala Design from recovered “no-felling” wood, sourced from trees fallen due to natural causes. Each backrest preserves the memory of its origin and the story of the material.
  • Canopy: Constructed from standard electrical conduit pipes. Its mechanical assembly without drilling allows all components to be recovered and reused.
  • Sound System XI: Consisting of two modules constructed from poplar plywood and connected to each other by Bluetooth, it is a visual and sonic signature of the Lucas Muñoz Muñoz studio.
